Originally from Geelong, Australia, with an extreme passion for cooking – Tom is a clear testament to the fact that with hard work, dedication, and a little creativity, you can achieve anything you set your mind to at any age, anywhere.
Tom graduated from St Joseph’s College, Australia in 2003 and began his career. From the time he started out until now, Tom has worked in some of the most prestigious restaurants in the world and created a food movement within the UAE.
Tom was the first apprentice chef taken on by Shannon Bennett for his modern French restaurant, Vue de Monde in Melbourne, winning the title of Australia’s best restaurant three years in a row and globally ranked as number 73. Tom moved to Singapore where he was Head Chef of a modern French restaurant, before moving to San Sebastian, Spain to work at Arzak, the 3 Michelin star, 7th best restaurant in the world. Tom’s next move was to Muscat, Oman, where once again he worked for Shannon Bennett, opening his first overseas venture and signature restaurant, Vue by Shannon Bennett in Al Bustan Palace.
Early in 2010, Tom moved to Abu Dhabi as the executive chef for an Australian based fine food retailer and restaurant. It was during this role in Dubai that Tom met Serg, and after much research and consideration they decided to branch out on their own and open Tom&Serg, their first café in November 2013. The focus of the café is on serving good, honest, casual food with great coffee in a relaxed space. The outlet has filled a gap within the F&B scene in the city and appeals to both the local community and international visitors alike. From its success came The Sum Of Us, and Common Grounds, as well as two licensed venues, Brunswick Sports Club and Muchachas Mexican Cantina. These venues are all different and embedded with their own personalities, but still built on passion and a common goal of changing the dining scene in Dubai.
After graduating from the prestigious Carlos III University in Madrid, Serg went on to complete a Masters degree in Hotel and Restaurant Management. His love for all things food and beverage led him to Abu Dhabi where he climbed the ranks to secure an Assistant F&B Manager position at Le Meridien at just 26 years of age. As a result of his tireless hard work and determination to succeed, he was then promoted to Food & Beverage Director where he was responsible for 13 outlets and over 300 employees.
Following this, to gain a better understanding of hotel development, Serg took up a post working as the Sales and Marketing Director for a prominent hospitality property company in the capital. From there, he was given an opportunity to become the Operations Manager for a gourmet food store and cafe where he opened and operated their outlet in Dubai.
Serg’s Operations role was where he met Tom. They saw a niche in the market for casual dining in the city that served good food, good coffee and good vibes and since then have pioneered a trend and demand in the market. The team launched Tom & Serg in 2013 and from its success came The Sum Of Us, and Common Grounds, as well as two licensed venues, Brunswick Sports Club and Muchachas Mexican Cantina. These venues are all different and embedded with their own personalities, but still built on passion and a common goal of changing the dining scene in Dubai.
With more than 25 years’ experience in the asset management and private equity industry, George joined forces in 2013 with Tom Arnel and Sergio Lopez, to establish the Bull & Roo Hospitality and Investments company.
Starting with the opening of the successful Tom & Serg café in the Al Quoz district of Dubai, followed by two additional cafes, The Sum Of Us, and Common Grounds, as well as two licensed venues, Brunswick Sports Club and Muchachas Mexican Cantina.
George has had an illustrious career with over a decade of experience in private equity, the sales of a number of businesses, fund management and asset management. Throughout his time in the GCC, George has held a number of board positions in other regulated financial companies – some publicly listed – in countries including Saudi Arabia, Oman, Qatar and the United Arab Emirates. Similarly, George has established or seeded a number of funds focused on investments in global and regional markets such as Turkey, Qatar, India and Saudi Arabia.
It is this experience that has firmly established George as a respected professional in the investment management industry in the Middle East, and has seen him featured in the Arabian Business Power 500 List. He graduated from University College London with a BSC. in Economics and attended the Harvard Business School Executive Leadership Program.
George continues to advise and work with a select group of family offices, institutions and high profile individuals in the Middle East, Europe and Latin America, on private investment transactions and other business ventures.
